Chocolate Honey Orange Chia Seed Pudding



Gelatinous.  That is the word for chia seeds.  Some may say slimy.  I won't say slimy.  I'll say gelatinous.  

So they can be quite polarizing.  Eric- not a fan.  He votes slimy.  In fact, he said, "how can you like this and not mushrooms?" (since I'm such a texture freak).  And that's because mushrooms are disgusting, no contest, end of discussion, finito.  It's spongey for god's sake.  If I wanted to eat a sponge, I would just eat a sponge.  

Ok back to pudding though.  Chia seeds do this thing where they create a gelatinous bubble around themselves so they're bulky and slightly chewy.  And when mixed with the right ratio of liquid, you've got yourself a scoopable "pudding."  An everyday pudding too.  Cuz now it's health food.  Ta-da!
        
Naturally, I knew I wanted chocolate pudding and I briefly considered making a spicy chocolate cinnamon pudding (yum right?!) but then my eyes spotted some oranges and then they spotted some honey and the recipe practically made itself.  Having been a fervent orange-chocolate hater when I was younger, I've since realized the error of my ways.  Chocolate + Orange 4-eva.  

Here's the recipe! 

Chocolate Honey Orange Chia Seed Pudding
serves 2 generously

Ingredients

  • 1/4 cup chia seeds
  • 1 1/4 cup unsweetened almond milk
  • 1 tablespoon unsweetened cocoa powder
  • 2 tablespoons corn starch
  • 1 tablespoon honey (or more for desired sweetness)
  • 1 tablespoon orange juice
  • 1 teaspoon orange zest (and more for garnish)
Directions
1.  Add almond milk, orange juice, orange zest, and honey to a medium bowl and mix well to combine.  Add cornstarch cocoa powder and whisk until no lumps remain and well incorporated.  Add chia seeds and mix.  
2.  Cover and refrigerate for at least 2 hours, or up to overnight.  When ready, serve and garnish with grated chocolate and orange zest.

  2. Love this! My kids can't stand mushrooms because of the texture so I don't know if they'd be too into this little recipe but I would! Chia is healthy...it could be a treat for just my husband and me!

    1. Yep, texture definitely takes some getting used to! But it's certainly a nice treat for some more mature palettes!
