Angel Food French Toast

Now we're talking!  This Angel Food French Toast is the jam.  Total heaven.  

 First, French Toast is one of the best brunch foods.  It's carby and usually drenched in syrup.  For years in my early twenties I ALWAYS ordered the French Toast at a diner we used to frequent at about 2am.  It just hit the spot.  And strangely, it's one of those things I almost never make at home so getting it at brunch (or diners at 2am) feels extra decadent.  





 BUT the fact that this French Toast is made with Angel Food Cake?  Gah.  There are no words.  Angel Food is so light and sweet and spongey.  The first bite was instantly a familiar taste (the toasty exterior) and then an immediate airy lightness (the Angel Food).  I could have maxed out the entire batch by myself.  


So obviously maple syrup, as delicious as it is, was to plain for this French Toast.  Only my beloved Easy Blueberry Sauce would do.  Guuyyyyss, get this sauce in your life.  It was so delightful with the French Toast and I don't think I need to tell you that it would be equally delightful with pancakes or waffles.  There are no wrong answers here.  Get at it.   

Here's the recipe! 

Angel Food French Toast with Blueberry Sauce

Ingredients
1 prepared angel food cake, sliced into 12 pieces
3 eggs
3/4 cup milk
1 tablespoon flour
2 teaspoons vanilla extract
1/4 teaspoon salt
1/4 teaspoon cinnamon
2-3 tablespoons butter

Easy Blueberry Sauce 
sliced strawberries, if desired

Directions
1.  Make Blueberry Sauce and set aside to cool slightly.  
2.  In a measuring cup, whisk together a few tablespoons of the milk with the 1 tablespoon of flour to make a slurry.  Add slurry to the rest of the milk and stir.  
3.  In a large shallow dish, whisk together milk, eggs, vanilla extract, salt and cinnamon.  Heat a large skillet on medium heat and put a some butter in the skillet.  Gently dip the sliced angel food cake in the batter, making sure to tap off excess egg, and, working in batches, place the angel food cake into the skillet (I did 4 slices at a time).  It'll take about 2-3 minutes per side until slices are golden brown.  Remember to also fry the thick third side of each piece.  Repeat until all slices are done.  While you're working, you can keep completed slices in a low oven in an oven safe dish to keep warm while you work.  
4.  When ready to serve, drizzle with blueberry sauce.  If desired, top with sliced strawberries.
